Peach Caperse: A Delightful Treat!

What’s the worst part of watching a cooking show on television? Not being able to taste what you just saw being created. Well that’s not a problem here at The Commons at Brightmore as we have our wonderful chef Ryan McCoy come and prepare amazing dishes every month as part of the Cooking with Ryan program. The residents are able to watch as he chops, whips, and stirs, turning ingredients into mouth watering works of art, and then unlike the cooking shows on television where you have to imagine what it tasted like, the residents here get a chance to eat, or should I say devour, the wonderful creation Ryan just created. Recipe: 4 ripe peaches 2 tbsp chopped mint 8oz fresh mozzarella cheese 1 tsp lavender 1/2 cup hot water 1 green tea bag 1/2 pint fresh blueberries 1/4 cup honey Directions:- heat water to boiling and add tea bag and lavender
- allow to steep for 3 minutes
- remove tea bag and strain lavender from the water
- allow water to cool in refrigeration for 10 minutes
- once cooled mix with organic honey and set aside
- wash peaches, slice in half and remove pit
- slice peaches in thin segments and add to mixing bowl
- tear the mozzarella into bite sized pieces and add to the bowl
- add fresh chopped mint and blueberries
- toss together until mixed
- top salad with scented honey and toss all ingredients together until mixed
