Make Your Own Irish Mug Cake for St. Patrick’s Day!
A small group joined in the Activity Office Kitchen to make “Irish Mug Cakes” to celebrate St. Patrick’s Day early. Not many of us bake a lot at Brightmore, but once in a while you may get a sweet tooth and want to make something quick! Simple desserts can be made in the microwave oven so we decided to try it out. The best thing about making a mug cake is that the recipe actually makes two cakes, so we were able to make one for ourselves and one to give to a friend! It was a very enjoyable afternoon of cooking and socializing…this brought about some great stories and reminiscing about the old days!
Recipe: Shamrock Irish Mug Cakes
Ingredients:
1 large egg
3 tbs. Vegetable oil
¼ cup granulated sugar
½ tsp. pure vanilla extract
1 tsp. liquid green food coloring
3 tbs. buttermilk
1 drop peppermint extract (or 2 to 3 tbs. Irish whiskey)
1/3 cup self-rising flour
Pinch of Kosher salt
Can of cream cheese white frosting
Green crystals
Method:
In a bowl, whisk together the egg and oils with a fork. Stir in the sugar, vanilla, food coloring, buttermilk, and peppermint or whiskey. Add the flour and salt. Beat the batter until smooth. Divide the batter between two mugs. Microwave separately for 1 ½ to 2 ½ minutes each until risen and firm.
Let cool and frost with the cream cheese frosting (tinted green perhaps?), and sprinkle with the green crystals!
