The residents at The Commons at Brightmore had a great time yesterday at our monthly “Cooking with Ryan” program. It is quickly becoming one our residents’ and staff’s favorite and maybe most delicious programs! The recipe he whipped up for us this time was a Chicken Salad with walnuts, apples, and grapes served with crackers. Ryan also discussed an upcoming competition that he would be entering representing the campus in Buffalo, NY. The residents wished him good luck and stated that they knew he would be bringing back a prize when he came back!
If you’d like to make your own Chicken Salad, here is the recipe:
½ cup chopped walnuts
3 cups chopped cooked chicken
1 cup seedless red grapes, halved
1 large Gala apple, diced
1 cup diced celery
½ cup mayonnaise
½ cup honey mustard
1 tablespoon thyme
Salt and Pepper to taste
How to Make It:
- Preheat oven to 350 degrees. Bake walnuts in a single layer in a shallow pan 6-8 minutes or until toasted and fragrant, stirring halfway through.
- Stir together chicken, next 5 ingredients, and walnuts. Add salt and pepper to taste.
