It seems like we are always trying to make “snacking” healthier, so why not make a no-bake snack full of protein, fiber with enough sweetness that it will take that sweet-tooth away for a while! A small group of residents at Brightmore got together to get their hands messy while preparing a fun healthy snack to take home. This time together also creates an environment where the ladies talk about all the fun they had in their own kitchens and desserts they made for their families that were similar to this one. There is always a lot of laughter that goes along with each story!
- 1 cup rolled oats
- 1/2 cup mini semi-sweet chocolate chips
- 1/2 cup ground flax seed
- 1/2 cup crunchy or smooth peanut butter
- 1/3 cup honey
- 1 teaspoon vanilla extract
- 1 cup coconut flakes
Combine oats, chocolate chips, flax seed, peanut butter, honey, and vanilla extract together in a bowl; form into balls using your hands. Arrange energy bites on a baking sheet and refrigerate or freeze until set, about 1 hour.
